Hmmm. Both zucchini and eggplants can be used to make stuffed vegetables( a bit difficult to make, to be honest. Just learned how to make them from my mum a year ago).
Okra and eggplants can be used to make tagine (which is actually really easy to make, just look up some tagine recipes online :D).
The only recipe made using mallow leaves is mallow leaves soup (molokheyya). That one is really easy to make especially if you have frozen mallow leaves (which can be found in all supermarkets in the Arab world, and probably in big supermarkets that sell international food ingredients outside the Arab world).
Cucumbers are only used to make salad in the Arab world.
